Do It Yourself Super Bowl


Once you've prepped just a few ingredients and salad dressing it takes no time to throw this hearty and filling salad together throughout the week!


- 1/2 Avocado

- 3/4 Cup Green Lentils

- Handful Cherry Tomato's

- 1/4 Red Onion

- 1 Sweet Potato Roasted

- Raw Pumpkin Seeds

- Kale

- Romaine

-1/4 Cup Tahini

- 4 Garlic Cloves

- 5 Basil Leaves

- 1 Tbsp. Olive Oil

- 1/2 Lemon

- 2 Tbsp. Maple Syrup or Honey

Lentil Bruschetta

- In a saucepan, combine 3/4 cup of green lentils and 1.5 cups of water. Bring to a boil

- Reduce heat to medium-low brining to a low simmer, and cover pot

- Cook for 15 minutes, until the lentils are tender but not mushy

- Drain lentils, transfer to a bowl and let cool to room temperature

- Dice handful of tomatoes, 1/4 red onion, basil leaves and 2 garlic cloves

- Add diced items along with 1 Tbsp. of olive oil and salt and pepper to taste

- Refrigerate for at least 1 hour prior to serving

Tahini Dressing

- In a mixing bowl add 1/4 cup of tahini, half a lemon squeezed, 1 Tbsp. maple syrup or honey, and 2 pressed garlic cloves

- Whisk to combine, then slowly add water until creamy and pourable

- The mixture may seize up and thicken at first, but continue adding water a little at a time and whisking until creamy and smooth
