Tilapia Gyros with Non-Dairy Tzatziki

Trust me when I say you won't regret attempting this recipe at home!


Simple ingredients, easy recipe, little clean up and a meal filled with flavour! What more could you ask for in a meal?


Non-Dairy Tzatziki

- 1/4 cup coconut yogurt or coconut sour cream

- 1/4 cucumber grated (squeeze in cloth to remove excess water)

- 1 tablespoon freshly chopped dill

- 2 garlic cloves pressed

- 1.5 teaspoon extra virgin olive oil

- 1 tablespoon red onion finely chopped (optional)

Baked Tilapia

- 2/3 cup seasoned panko

- 1 egg

- 4 tilapia fish fillets

- Parchment paper

Pita Bread and Toppings

- 4 whole wheat pita wraps

- 4 leaf lettuce leaves

- 1/2 cucumber thinly sliced

- 2 roma tomatoes diced

Cooking Instructions

  1. Pre heat oven to 425 fahrenheit. In a bowl mix together tzatziki ingredients then cover and place in the fridge.

  2. In a bowl whisk your 1 egg with a fork, in another bowl pour out panko. Dip 1 fish fillet into the egg coating both sides then transfer into panko bowl, making sure both sides are coated. Transfer to cooking sheet on top of parchment paper, continue the same process with the remaining fish fillets.

  3. Bake 20 to 25 minutes or until fish flakes easily with fork. Wrap pita breads in foil, add to oven for the last 8 minutes of baking.

  4. To serve, place lettuce on the pita, top with fish, sliced cucumber, tomato and onion. Drizzle tzatziki sauce and fold over!
